This spring, Ni Fon Kitchen brings both worlds to one table — five Japanese sakes paired with four Taiwanese small bites, handmade the way your grandmother would recognise. Rice feeds us both. Rice becomes sake. And sake, it turns out, was always meant to be drunk alongside the bright, clean flavours of a Taiwanese spring table. An oriental breeze in every sip. A story in every bite. 5 sakes x 5 dishes · One unforgettable afternoon Sake highlights: 🍶Gokai (Hot) 豪快 Coffee and caramelised walnut notes with a tart yet creamy mouthfeel and a hint of white jasmine. Classic, clean, and medium dry. Pair with Taiwanese Golden Kimchi 🍶Kubota Koju 久保田 Mild and approachable, with green aromas and notes of celery, toffee, and cumin. Clean, sharp acidity with a hint of sweetness. Pair with Taiwanese Fried Chicken 🍶Shirakabegura Kimoto Junmai 白壁藏 Banana on the nose, with a creamy texture and yoghurt acidity. Rich, soft, and rounded with a hint of melon. This is Kimoto style. Pair with Taiwanese Sesame cold noodles 🍶Silky Mild Nigori 濁り酒 Partially filtered cloudy sake, light and sweet with honeydew notes, richest of the cloudy styles. Pair with Taiwanese Pan-Fried Dumplings 🍶Tsukasabotan Yama Yuzu Shibori Sake 山柚子 Filled with the fruity aroma of Yuzu on the nose. Extremely refreshing and delicate on the palate.
